Once I select a weapon, the only way I know to deselect it (i.e. return my cursor to normal, so I can select menus and crew) is to rightclick the weapon. This also powers the weapon down and restarts the weapon charge.

Thoughts?

Right-click anywhere but on the weapon slot you want to deselect.
This will deselect it without powering it down.

Important: this will also make any crew you have highlighted go to the room you clicked (if you happen to click a room), which is annoying and at times life threatening.

Do you mean the targeting cursor? To untarget a weapon right-click somewhere outside the ship and it will return the cursor to normal. Don't click on the weapon or it it will also depower it, and as EdenNov says don't click on your own rooms in case you have a crewmember highlighted.
