No you don't. I've had many cases where I jumped to a beacon, to reveal a store which I did not see before. Where did you get that idea?

I believe The Last Stand sector counts as explored for you. You know where the repair beacons are and stores (if any). I guess it doesn't tell you where the ships are, so maybe it's partially explored. It could be generous enough to reveal where the hazards would be on the map and you can make your strategy around that. *shrug*
No, you do not know if and where the stores are in the last stand.

I've only ever seen one store in last stand too, no multiples.

Alright, I was wrong about that. The XML says there can only be one store in The Last Stand, and I guess it's not auto-explored; just the repair bases are. Hazards in a battle are determined by the event that's triggered there, rather than being associated with the map. Doesn't look like it's doable just with XML (perhaps unless you want the boss ALWAYS to have a hazard in it...)
