The literal answer to your thread title is no. Death is death.
But.... should your ship be destroyed while boarding the enemy i assume (speculation) the game ends but your right, if you manage to overwhelm the enemy crew you should be able to commandeer it as your new ship. I doubt they have programmed the game for such an eventuality.
