Multiple crew members
If you put two or more crew members in -- say -- weapons -- does it help you with weapons more than if you had just one crew member in that room?

Nope, it just helps you repair the room faster when it gets hit, at the cost of whatever damages the room damaging both crew members instead of just one.
For that reason it's probably best to just put the extra crew member in an adjacent empty room, so that when the Breach Missile lands in there you can start double-repairing the room almost but not quite immediately, without having to have both crew members tank the 60 damage plus possible stun, breach or fire.

Two Zoltans in Shields actually do make a difference. Because they each provide one power, they give you one shield layer that cannot be ionized away.

I had made a ship a while back that exploited that fact - it had an 8 person shield room. 4 layers of ion-proof shields
